What's Owen Eating?

 We have two trips to Seattle this week so I planned our Keto cooking to include things that are easy to eat in the car as well as a few things that don't need heated up. Today we made 3 Pecan Waffles, 2 Breakfast Cookies, 4 Macadamia Nut Doughnuts (only ours aren't actually doughnut shaped since I don't have a mini doughnut pan or cooker yet), 1 chicken salad (this is a new recipe for us so I don't know if Owen will actually like it), and 15 Macadamia Nut Pancakes. I still need to make some Ketocusine Cheese Sandwiches and probably some more Spinach Bites since he keeps asking for them.
Macadamia Nut Doughnuts

 I've had some requests to post Owen's favorite recipes. Today I thought I'd highlight his absolute favorite, most often eaten meal, the Macadamia Nut Pancake. I can't remember where I found this recipe first, but it is super easy and most importantly, NOT oily. Owen reminds us all the time to not make his food oily.
 Remember, don't use this recipe as is unless your calorie and ratio needs are exactly the same as Owen's. I posted HERE about how I rework recipes to Owen's specifications.

This recipe is 269 calories at a 3.09:1 ratio.
24g egg (raw mixed well)
26g macadamia nuts (ground into butter)

Mix well and pour into a small non-stick pan greased with cooking spray (your keto team can recommend a brand). Cook until firm and then flip and cook the other side.

 See how easy this recipe is? Now comes the fun part though!

 Serve the pancake with 2g of butter and ONE of the following:
21g frozen strawberries
26g fresh strawberries
15g blueberries (you can also put these into the batter before cooking)
18g raw peach with skin
13g apple, peeled
22g carrots, raw

You can also serve with only 1g butter and 2g semisweet chocolate chips.

See why we make so many of these pancakes? He can have them so many ways. I'm sure other vegetables and fruits would work too, we just haven't tried them yet. To change this recipe to a lower ratio you just reduce or eliminate the butter and increase the fruit or veggies. I didn't actually change the pancakes when we switched ratios, just the "extras". I haven't tried it at a higher ratio, but I'd imagine you'd reduce the fruit and veggies and increase the butter. Remember to always check with your dietician before using a new recipe!
