What's Owen Eating?

  These are the ingredients for Owen's chicken nuggets. Macadamia nuts, oil, precooked chicken, and whipped egg whites. Notice the chicken isn't the main part of the meal. Somehow I missed getting pictures of the finished nuggets, but we cook them in mini silicone baking cups. Otherwise they fall apart and can't be made ahead.

 This waffle is mostly egg and ground pecans. Owen likes anything he can have fruit with, so these are a favorite. The syrup is Walden Farms pancake syrup.

 We picked some really small blueberries, so look how many there are in 15 grams! This is his standby macadamia nut/ egg pancake.
  The other day Owen asked for chocolate chips when the other kids made cookies. At first I told him no, but then I remembered how happy he was with his grapes even though he only got two grapes, so I decided to check. I managed to give him 2 grams of chocolate chips which came out to 4 chips. He was thrilled! He just savored each one. It took him almost 10 minutes to finish them.
 We've only had two major meltdowns about food this week! It's getting better.
